Our curated herds spend most of their lives grazing in the open range of the Northern Utah mountains and valleys. Then, they are grain-finished with a specialized diet to increase marbling and delicious flavors.

Hand-Cut by Master Butchers

An apple cider vinegar wash and 28-day dry-aging process create rich flavors without additional preservatives. Then, master butchers hand-trim each cut for the best possible product.

Diamonds a cut above

Our standards for quality and taste are sky high. All of our herds grade at USDA Prime and Choice levels—or higher. Our Diamond system for Wagyu beef measures intramuscular fat higher than 20% to more than 40% for exceptionally buttery, rich, and decadent beef.
